ABOUT

WE LOVE PUPUSAS!

Five triangular shapes, each resembling a stone archway with a series of diminishing blocks.

Old Coyote is Midtown Sacramento’s rising star in Latin fusion cuisine, with a bold focus on pupusas. Rooted in Salvadoran tradition and reimagined with global flavors, our pop-up brings a fresh take on this beloved street food—offering everything from classic revueltas to inventive fusion varieties like samosa, walnut chorizo, and chicken mole.

HISTORY

Founded by Chef Pablo, a seasoned culinary professional with over 12 years in the food industry, Old Coyote was born from a deep nostalgia for the aroma of fresh masa and the joy of hand-pressed tortillas. That sense of home, comfort, and warmth is exactly what we strive to share with our customers.

We started from the ground up—going head-to-head with established brick-and-mortar pupuserias—and quickly stood out for our consistent quality, attention to detail, and personable service. As a Latin-owned business, we also aim to break barriers by being approachable, inclusive, and proudly representative of the next generation of chefs and food entrepreneurs.

OUR MISSION

Old Coyote isn’t just about great food—it’s about building a better future in the industry. That’s why we’re working toward becoming a profit-sharing restaurant that values and supports its staff at every level.

Old Coyote invites you to experience the flavor, soul, and story behind every pupusa.
